Michoacán doesn’t follow Mexico’s rules. It never has.
The region that sheltered rebels, shaped artists, and draws the Monarch butterfly south every winter. It has always done things its own way.
Its volcanic highlands and altitude create a terroir unlike anywhere else in Mexico. Different soil. Different agave. Combines with Milton's mastery, to create mezcal that is fundamentally different.

For Zacal, every step is deliberate.

October to July.
Across family fields and foraged hillsides around Sahuayo.
Wild Bruto, foraged at altitude.
Each piña shaved completely clean.
No pencas. No bitterness.
Leave them on, you get harsh turpins.
Take them off, you get clarity.
A choice. Not a shortcut.

COOK
Buried. Slow. Controlled.
4–5 days in earth ovens at the family Vinata in El Fresno.
Volcanic rock. Two woods: Mesquite for intensity. Encino for refinement.
Sealed with red volcanic clay.
Less smoke. More baked sweetness.
Minerality, held intact.
Ancient process. Precise outcome.

MASH
Handled, not rushed.
Hand mashed and hand rolled.
Breaking fibres. Releasing sugars.
Nothing automated for convenience.

FERMENT
Left to do its thing.
7–8 days in open-air, wood-lined brick tanks. Agave fibres from the batch left in.
Wild yeast only.
No additions. No interference.
Terroir does its thing.

DISTIL
Most mezcals are distilled twice.
Zacal is distilled three times.
First in steel. Then twice in copper.
Softens the smoke. Complex, but smooth — without the burn you expect.
Adds time. Loses liquid. Worth it every time.

BOTTLE
Finished by hand. As it started.
Light filtration. Nothing more.
Bottled in Sahuayo by Milton and his team.
100% recycled glass. Custom made in Guadalajara.
